I just think it would be kind of a shame if her class doesn't adjust since it seems to be a futuristic setting and I believe that games will give more freedom to the player as it is now.

Firstly, I gotta remind you that the reason Yoru/Eve plays EPO in the first place is that she wants to get laid, which she believes will be impossible in the real life due to her condition (being a futanari) and she's afraid that if someone IRL knows about her condition she'll be ostracized and scorned at. Because she has this "secret" she tends to avoid getting closer to other people so that they don't snuff out her secret. This somehow influences her behaviour in the game.
For someone like her, it's really difficult to like um... how do you say it... flirt with strangers (NPC or player alike) and then ask them to have a fun night or something like that like an ordinary adult. But Celia is a s*x worker, someone who is having s*x with others for a living, so it's strictly business at first.
Moreover, because she is an NPC, it lessens the hurdle for Eve to share her secret with her knowing that she won't accidentally meet with her in IRL and accidentally get exposed. So maybe it is creepy for you but for Eve it's almost a perfect choice.
Also if she's only interacting with them in-game how does she know they aren't perverted, old men?
She can't and honestly, at this point of the story, she doesn't even bother to think about it. If I were in her shoes, I think I don't even want to interact with them IRL.
What if she asks to meet with me and then we make out and then she realizes that it's not only in the game I'm being a futanari but also IRL, and then gets scared of me like I'm an abomination or something and then she avoids me or worst she know someone from my company or my circle and then she spread a rumour about me being a futanari and so on so forth. It's scary, dude.
And I think Yoru also think the same. So what happened in the game stay in the game just like what happened in Rome stays in Rome. That's her mentality in the early period of the story. There'll be development along the way of course.
